I've a quiet a few different recipes with cornmeal, and I wonder if it was the coarse grain you used, that stuff needs to be boiled in milk, water or stock for quite a while to break down that roughage.

I might whip these up this weekend, I have a jar of fine cornmeal to use up. Thanks for the idea!
