Love it. I picked up apricots today (first crop of the season!!) and will make my apricot spongey cake. They had peaches there as well, and I almost bought some but remembered the truth about the window of ripeness. With only a few hours a day between waking from nightshift sleep and getting ready for work, timing is critical. Apricots this week. Peaches next week. But I will make this, freeze it (unbaked) and I think I'll make a couple of peach pies as well.
