Sometimes, when life gives you lemons–you almost die.
On this past Good Friday, I prepared filets of simple pan-fried Haddock for our fish Friday supper — nothing fancy, olive oil, butter, seasoned filets, with a side of rice and vegetables.
It was plain, but often, simple is best.
Haddock is one of the very few frozen fish filets acceptable to consume here in the prairies, according to my fish-finicky east coast-born wife, and readily gobbled up by my seafood-loving daughter.
But, as a formerly very fancy chef, it’s hard for me to resist adding some splash to liven up the basic presentation. So I opted for a squeeze or two of fresh lemon juice.
After supper, we retired to the living room to watch a family movie. We were about halfway through the show when I began having thoughts of meeting Jesus.
Mild Epiphany: Not every yellow is a good fellow.
I snagged a lemon from the half dozen or so I had sitting in my “cold corner” of the basement, returned to the kitchen, and gave it a rinse and a test squeeze.
It was a little soft.
