Revelation: God loves me.

How do I know?

Catering a fancy dinner today. Two solid days of prep work concluded late last night but I committed several sins against kitchen rules.

  1. Made the dessert last. You never do this. You make dessert first. So that if it bombs, you have time to go again.
  2. Made a recipe I’d never attempted before. You never do this. For a fancy dinner, you need to nail the big finish. Go with something solid. Not the time to experiment.
  3. Doubled the recipe. Almost never do this. Baking wise, this is a general No-No. Baking is science. Kitchen math is not like actual math. Double recipe doesn’t always equal double baking time, for example.
  4. Converted the new recipe to gluten-free. This is a fool’s errand. Not wise my son. Not wise.

As I watched one half the batter blend, I had doubts. As I folded the two batters together, anxiety arrived.

I took old Jackboy outside for his bedtime business, sat down on my bench, made the sign of the cross and said a heartfelt prayer to St. Honoré, the patron Saint of Bakers and Pastry’s Chef’s. It was a plea.

My prayers were heard and answered and the dessert is divine.
