Very informative and interesting, Diane! The fresh Bonito looks gorgeous! And the one that's hard as rock, you can't even tell (or I can't) that it's fish.

I've made Dashi broths and soups before so the next time I get up to the Asian market, I'll look for a bag of those flakes!
