Well written but if the sauce is the feature ingredient of the dish, then in most cases, the focus is misplaced. Exceptions include neutral blanc and Italian paste sauces. should otherwise be made to meld to the showcase item on the plate. If you taste the sauce over the serving, you have gone too far.
